Dead Easy Low Carb Food 1 - Chicken and Blue Cheese

If I were on Twitter I would say this was #PBD, which means it's Probably Been Done.

Anyway.  With apologies to who ever dd this first, I just thought I'd share with you the first of my Dead Easy recipes which won't make you fat, but will still give you something to look forward to at the end of the day.

Eat it while it's hot.  Melted blue cheese is just scrummy...

Chicken is a bit of a bind, because unless you're going to roast a whole one yourself, the chances are you're going to be stuck with chicken breasts which have loads of water in them, don't have much flavour, and get really dry when they're cooked.

So... We're going to GRILL our chicken.  Not to be "healthy", but because that's the best way of getting shut of all that blooming water.

Before you serve them, slice them open and add a generous amount of blue cheese, or cheddar, or any other full fat cheese you like.  Bung them in the microwave to melt them if you want.  Especially if it's on the plate you're serving on - because then the cheesy goo will sit on your plate.

Serve them with some green salad and a few tomatoes if your particular diet plan will allow them.

That's it. Sorry this is such an obvious meal but I'm trying to address the fact that people always say they're stuck for ideas when they start cutting back on carbs.  With this - you get your protein AND your fat, and it tastes lovely.  Glug a bit of olive oil on your greens if you like.  It won't make you fat either.
